pink lemonade bars WHAT

 So I like pink.  This much should be clear by now.  Someone told me the other day that I never wear pink, to which I responded, “AREYOUCRAZY” because, seriously, look at my color palette.

Ahem, whatever, moving on… The pink obsession obviously translates well into my favorite foods.  And this one here is no different.  In middle school, I was crazy for bake sales.  My lemon bars received rave reviews back then… But those ones came out of the box.  I decided to revisit middle school AGAIN this week for a throwback that- this time- was made from scratch AND gluten-free, of course.

Using this recipe, I traded out the all-purpose flour for almond flour, and a 1/4 cup of the crust’s flour for coconut flour.  I’m still playing around with this whole gluten-free schtick so I added 1/4 tsp of xanthan gum to the crust and 1/4 tsp arrowroot to the filling but I have no clue if that made any difference… The end result fell apart easily but positively melted in my mouth.  It was unbelievable, if I do say so myself.  Seriously, come over quick before they’re all gone.  Because I will eat every last one of these.

And what’s dessert without a refreshing cocktail to wash it down?  I left the actual mixology to the manly-man but requested a pink lemonade/gin/soda sort of thing…

And helloooo beautiful.  You are so refreshing.  What a cool, frisky balance you are to the warm, lush, richness of these desserts…

I think that what I’m trying to say is… I need to have a dinner party.  Stat.
